Chicken Burrito Bake


First time I've made this and to be honest I had a few recipes but went on my own course...  I had a little chicken and some flat breads and didn't want to make wraps.. this way we got more 'bang for our buck' with a hearty meal - very tasty too and leftovers for hubby to take to work.  He's already asked this to go on a regular rotation on the menu plan, so I'm guessing he enjoyed it!

Ingredients
2 full breasts of chicken (i.e. double sided) chopped into small bite-sized pieces
1 serve of taco mix (or if you must buy it, 1 packet)
7-8 flat breads/burrito (I used mountain bread)
50g butter/margarine
1 can refried beans(or because I didn't have any so I roughly pureed 1 can butter beans and 1 can cannellini beans)
1 1/2 cups tasty cheese - grated/shredeed
1/2 cup mozzarella cheese - grated/shredded
3 spring onions - chopped finely
1 red onion - chopped finely
1 420gr tin diced tomatoes
Chilli powder
1 sliced capsicum (optional, I didn't use it as hubby is allergic)

Method:
Preheat oven to 200 degrees c
Melt your butter in frypan and add your taco seasoning, add chicken and saute until cooked, set aside.

On your flatbreads, spread bean mix, scatter chicken, spring onions and some tasty cheese

Roll, and put into greased baking pan
Repeat until you've filled your baking pan
Mix your tomatoes, onion, chilli powder and capsicum if desired in a bowl, spread on top of burritos
Finally spread remainder tasty cheese and mozzarella cheese.. cover with foil, and bake for 30 minutes with foil on, then 10 minutes without.
Serve with shredded lettuce and diced tomato atop. (lettuce here is from our garden!)
