Northern Rivers Delights: Lemon Myrtle and Macadamia Biscuits


With the bounty I have returned from our holiday I set to work to make some items for our pantry - we had taken much of our stock with us, and came back with none!

These I got at Lennox Head Markets:
Macadamia Oil Infused with Lemon Myrtle $8.50
and Lemon Myrtle Spice $4.00

I've used only the spice in this recipe, but I have bought home with me two full bushy branches of leaves home from a lemon myrtle tree - as all this spice is - dried and milled leaves.   

So onto the recipe:

Northern Rivers Delights
These are quite buttery like shortbread, but much lighter.  The lemon myrtle gives it a citrussy yet more aromatic taste and smell.  It's intoxicating!

Ingredients:
200 grams margarine
100 grams white sugar
225 grams macadamias - whole or chopped (I would suggest chopping at least half of them)
225 grams self raising flour
1 tsp lemon myrtle spice (or try 2 tsp lemon zest if you can't get any)

Method:
Preheat oven to 200 degrees c.
Cream margarine and sugar
Add macadamias and mix until most pieces are distributed throughout the mix
Add lemon myrtle spice, mix until well distributed

Lastly add flour, mixture should look crumbly but sticky and easy to mould.

Roll into balls roughly the size of a ping-pong ball
Place on greased tray and then push down with floured fork or fingers until a little flat
Bake for 10-15 minutes until a little golden on top.  Cool on tray and when cool, transfer to airtight container for storage.
