Sausage Pie


This was a request from Amanda, last time I made it and commented how yummy it was she was disappointed I had no blogpost coming! So I promised I would do one next time, a promise is a promise.

This is actually a great way to eat sausages in a non-fat -well reduced-fat way. You can use regular beef sausages but I like spicy sausage in it like italian or spiced pork sausage - it's up to you!
Ingredients:
600gr sausage of your choice (If you're time-pressed and not watching your fat intake you can use leftover fried/bbq'd sausages)
1 large zucchini
1 large carrot
1 large brown onion
1 medium potato
1 cup grated light cheese
3 eggs
1.5 cups skim or regular milk
2 sprigs thyme or 1 tsp dried thyme

Method:
Boil sausages - let cool - peel skins off and slice in 1cm slices.
Preheat oven to 160 degrees C
In a baking dish, spray with canola oil and grate directly into it the onion, carrot, and zucchini.


Put in microwave for 2mins on high. This will cause the zucchini to sweat - drain, re-spray tray and grate in cheese, add sausage and thyme.
In separate bowl, combine milk, eggs, add salt and pepper and then pour into baking tray and combine ingredients.
Bake for 1 hour.
