Velvety Pear Ginger Upside-Down Cake


I have some pears that are on the ripe side so you'll be seeing some pear recipes over the next couple of days!

This recipe is the marriage of pears and my favourite spice: ginger. The cake is like warm gingerbread soft and rich and the pears are such a lovely combination - with the toffee- like top. This could be served as cake or warm with with a dollop of cream on a cold night. Good news is that there's minimal washing up too.

Ingredients
125 grams butter, melted
1 cup brown sugar
4-5 pears, peeled cored and thinly sliced
1 egg
1/2 cup golden syrup
1 1/4 plain flour
1/2 tsp bicarb soda
1 tsp ginger
1/2 tsp mixed spice/allspice
100gr sour cream

Method:
Preheat oven to 160deg c
Grease, paper and spray a loaf tin or small round tin

Sprinkle 1/4 cup of the brown sugar on the bottom of the pan
Pour approx 1/3 of melted butter over sugar
Arrange pear to cover bottom of pan

To the rest of the butter, add remaining ingredients and mix with electric beater (I did mine with a stick blender) until smooth.


Pour over top of pears and smooth top.

Bake for 50-70 mins depending on size of pan, test with skewer.

When done, take out of oven and let rest for 5 mins then turn out.
