The addition of lemon plus garlic and rosemary give it something extra - and a good balance to the smoky flavour of the fish. It would also be really nice served as cocktail pleaser in small balls but instead of garlic and rosemary I would add coriander and a little bit of chilli and a sweet chili dipping sauce.
This recipe made two meals for us - 12 large cakes (adult size) and 24 babycakes (for kiddies) Freeze after full prepared, not at the pre-cooking stage.. You can re-heat in the oven for convenience.
Ingredients:
900g smoked cod
1kg starchy potatoes, peeled, boiled and drained well. (Desiree or russet)
zest of 2 lemons
3 tb fresh rosemary finely chopped or 2 tsp dried
3 tb fresh chives finely chopped or 2 tsp dried
2 cloves garlic finely chopped
100gr butter or margarine
Pepper
3 cups milk (I used milk powder and water)
3 cups of breadcrumbs (I used 4 pieces of wholemeal bread in food processor to make breadcrumbs)
2 eggs
Olive oil for frying
Method:
Once your potatoes are boiled, mash in your butter, lemon, garlic and rosemary and chives.

Ensure there are no bones in your cod (we found a few but they were easy to locate and remove)
Add your cod to the milk and poach - about 2 mins on each side - you may need to do this in batches.

Remove from pan, drain and discard milk and mash the cod into the potato mix.

Make the mix into the size cakes you would like
In a separate bowl, whisk your eggs

Make your breadcrumbs/put them on to plate/tray
Heat your oil in fry pan, with a pastry brush paint egg mixture on one cake at a time and roll in breadcrumbs

Put in fry pan and fry until golden, place on baking tray with paper towel, keep warm in oven whilst you continue making batches - this also helps warm through

We served ours with steamed carrots, broccoli and cauliflower. The fish cakes themselves worked out to about $16 for 2 dinners. Delicious and cheap! Winner that's for sure!
