Pretty pear pocket pies!



I've had this wonderful piece of equipment well over a month.  I've been dying to use it but it just hasn't happened (well that's understandable actually, I've been super busy!)  I got it with my cute-to-boot cookie cutters a friend sent over because at that stage you could buy from Williams Sonoma with a US credit card (you can now thanks to Hop Shop Go )  

The pastry recipe is from the outside of the box, and it's reminiscent of McDonalds apple pie actually - they suggest you either deep fry (!!) or bake them, but rest assured, I baked!

I had some pears that needed using but you could use apple, apricot, any fruit you like in a pie.

Ingredients
250g butter, cut into 1 inch cubes
2 1/2 cups plain flour
1/4 cup caster sugar
2 tb cold water
5 large pears, peeled, cored and sliced
1/2 tsp cinnamon
1 tb milk
2 tb demerara sugar


Method:
In a food processor add butter, flour, caster sugar and process until butter is dispersed evenly throughout the butter - it will resemble breadcrumbs.  Add water bit by bit until it comes together in a lump.

Remove, wrap in cling film or place in ziplock bag and refrigerate for 2 hours or overnight.

Preheat oven to 190 degrees c

Sprinkle your fruit if apples or pears with the cinnamon. Set aside.

Allow to thaw for about 10 minutes and dust your surface with flour.  Flour-up your cutter by pressing it into the flour and then roll out your dough over the flour.

Cut with cutter, push down the lattice part well to ensure the 'holes' press out properly.  Turn over the pie cutter and place one piece over the non-ridged edge part.  Fill with your fruit.



Place the lattice edge bit of pastry over the top and try to line up as well as possible.  Press over the mould.


Place on baking tray lined with baking paper and brush with milk.  Sprinkle demerera sugar over the top.

Bake in the oven for 25-35 minutes, until golden on top.

These are great for lunches, we took them cut in half in our lunchboxes on a day trip yesterday.  Delicious even cold.

Oh my goodness!! You are killing my diet, LOL. They look divine. Where did you say the actual mold was purchased? I just have to have one of those!
