Perfect days to make it at the moment, you can now find a sunny place to let them prove, and the kids can help you make them - that's what I did anyways! You could use the same recipe and make them for mini frankfurts too, a great little party pleaser! Maybe make them for your (repeated) grand final party this weekend?
Ingredients:
1 cup warm water
1 tb dry yeast
2 tb caster sugar
2 1/2 cups plain flour
1 egg
2 tb olive oil
12 frankfurts
Method
In a bowl or jug combine the warm water, yeast and caster sugar. Allow to sit for 5 minutes until the yeast froths up.
Mix into the flour and add oil and egg, knead for about 3 minutes by machine or 7 minutes by hand.
Place in an oiled bowl and cover with clingfilm. Set bowl in the warm place for 1 hour, by this time the dough would have doubled in size.
Roll it the dough out into a large-ish circle, Divide like a pizza into 12 equal portions.
Roll frankfurts into each portion by placing the long end of the triangle at the end and roll upwards.
Place on greased tray and brush with milk.
Place back in the cold oven for about 1 hour, the dough will rise a second time, then heat oven to 190 degrees. Bake for 20-25 minutes until lightly golden on top.
Serve!
How easy is that? You could if you're making ahead, instead of proving in the cold oven, leave them in your fridge until you're ready to heat - or even freeze them with the dough raw...
