Hasn't there been so many cool contributions this week? I'm loving the idea of cauliflower pizza crust and cauliflower pie! Yum!
I haven't gone over-imaginative or elaborate, but I do like mustard and garlic, and thought I'd try something a bit different. We served this on the side of our Moroccan meatballs the other night. True comfort food.
Try one of the other season savvy recipes with cauliflower or submit your own, there's some really basic, yummy ones that haven't been covered yet!
Ingredients:
25gr butter
1 clove garlic, sliced/chopped
1/4 cup wholemeal flour
1 tbsp dijon mustard
1 litre milk
2/3 cup grated tasty cheese
Salt and pepper
1 medium head cauliflower
Method:
In a saucepan, melt your butter and lightly fry your garlic until soft. Add your flour and stir well, with milk on standby. Add mustard and gradually add milk and stir with a whisk until thickens, eliminating any lumps as you go along.
Continue until all milk is in the saucepan and whilsk until it is a thick sauce. Set aside.
Preheat oven to 180 degrees c.
Steam your cauliflower in the microwave for about 6 minutes - just in a basin/bowl with a soft fitting lid, cover with a little space for steam to vent...
Place into your baking tray - and sprinkle with 1/3 cup of cheese.
Cover with your sauce and top with the other 1/3 of your grated cheese. Bake in oven for 15 or so minutes.
Yummy cold as leftovers too!
