Slowcooker Recipe: Spicy Beef Stew



Don't you love it when you start making something and realise halfway through that it's not what you expect it to be, so you modify it and it turns out brilliant?

Well that my friends is what happened with this stew.  I had a recipe for slow cooker curry but about 4 hours into cooking it, it tasted pretty bland!  So I did some modifications/additions and it turned out delish - will make again for sure!


Ingredients: - Serves 6
1kg blade or rump steak, cubed
1 leek, finely diced
1 pkt french onion soup mix
2 garlic cloves, crushed
2 cups water
1 tb curry powder
1 tsp cardamon pods
1/2 tsp peppercorns
12 cherry tomatoes (or you could use 1 tin diced tomatoes)
2 tb tomato paste
6 chat potatoes, quartered
1 medium kumera or sweet potato
1/4 cup frozen peas


Method
Into your slow cooker - put in raw beef, leek, potatoes soup mix, curry powder, garlic, cardamon pods, peppercorns and water.  Put on auto for 4 hours.



At the 4 hour mark, add tomato paste, cherry tomatoes (or tin tomatoes) diced sweet potato and frozen peas, and keep simmering for another 2 hours.

Serve with rice

Oh my yes. Can't wait till I bring out the slow-cooker again. Or, for that matter, get back into scheduled meal planning... This shall be going onto it let me tell you!

That sounds delicious! My sister got a slow cooker for christmas so I will definately be passing this recipe onto her.

The first picture looks so different from the pictureof the completed stew. It looks almost like the rich golden brown of a Japanese curry!
