As you may or may not know, my girls asked for a rainbow party some months ago so I put on my thinking cap:
Rainbow cake - this took for each cake three standard cake mixes (so people that is butter cake x 6 !)
Rainbow Jelly (7 colours, flavours!)
I made rainbow fruit kebabs (thanks for the suggestion guys!)
Fairy bread
Cocktail franks
Crisps and lollies

(tip, I covered chopping boards in plastic tablecloths to put the cake on, when it was cut I removed the cake, then tore the plastic off and put in the bin, no washing up! I also used the same tablecloth taped to some styrofoam which I put the rainbow kebab skewers in so they stood upright)
