Carrot Walnut Loaf





Well you know all those lovely carrots we dug up last week?  Well needed to put them to good use and as they are super-sweet I thought to not bake with them would be wrong, wrong, wrong.

This is a quick and easy one to prepare and a good freezer one too.  Delicious warm with cold butter.  mmm!  Only fitting this posts today, as my Aunt, Lyn, loves carrot cake, and today is her birthday.


Ingredients:
1 3/4 cups self-raising flour
1 tsp cinnamon
1 tsp baking powder
1/2 cup milk
1/2 cup brown sugar
2 eggs
125g butter
1 cup grated carrot
1/2 cup walnuts


Method:
Preheat oven to 180 degrees c

Sift flour, cinnamon and baking powder into medium mixing bowl.


Add brown sugar, carrot, walnuts, eggs and milk, mix until well combined..


Lastly add melted butter


Pour into greased loaf pan and bake for 45 minutes, do clean skewer test to check it's done...
