Dead easy Leftover Christmas Ham Bake




This is quickie and a goodie, you don't need to use ham off the bone, you could use any ham you either need to use or make this one of your lazy meals - I did both on Boxing day!  We still have about 1/2 our 6kg leg left and tomorrow it will be cut up and bagged up for the freezer in portions for sandwiches, cooking and of course, the hock for the soup.

I got the recipe I think from Recipes + this month, but I did of course modify it with the eggs and the mustard... I think it needed the richness.  My mother-in-law took this recipe home with her!


Ingredients - Serves 6
6 pieces of bread, buttered on one side and quartered.
6 eggs and 6 extra egg yolks (original recipe called for 12 eggs, I had egg yolks leftover)
150mls cream
2 stalks fresh thyme, removed from stalk
1 silverbeet/spinach leaf, roughly torn
12 cherry tomatoes, halved
150gr ham off the bone
1 cup grated tasty cheese
1 tb hot english mustard
Pepper


Method:
Preheat oven to 200 degrees c
Grease baking dish and arrange bread standing up with some crusts on top and some down bottom
Weave in alternatively as evenly as possible the spinach, tomatoes and ham

Whisk eggs, cream, mustard, thyme and pepper
Pour over the top of mix, sprinkle cheese on top

Bake for 30-40 minutes, check with fork egg has cooked to bottom of baking tray.  Serve hot or cold.

Sounds absolutely yummy!

I'll have to give that a try the next time we have ham.
