Frugal Fast Food: Moorish calamari rings in 10 minutes



My hubby makes these - he kinda 'owns' it in the house.  I just love eating it!  It's great in summer with salad or in winter with home-made chips and tartare sauce.  I thought I'd finally pin him down on sharing the recipe (he gets quite sacred about some things...) so I could share them with you.

We got about 40 calamari rings last night for a grand total of $6.00.  Better than 60c a ring isn't it?

As we ate them last night for dinner hubby asked the girls if they knew which animal or creature calamari came from...

'cow?' pondered Eloise
'chicken?' asked Olivia
'sheep!' protested Laura.

Hubby said 'I'll give you a clue, this animal/creature does not live on the land...'

Laura had an epiphany... 'ALIEN'!  she exclaimed.

No, not quite.  Then when we worked out it was squid Eloise amazed us with how much she knew about squids.. (seriously!)  I love the dining table conversations at night.


Ingredients
500g squid hoods, cleaned (about 4 hoods)
3/4 cup cornflour
1 tsp cracked pepper (halve this if feeding kids)
1/2 tsp sea salt (halve this if feeding kids)
2 cups canola oil to fry in.


Method:
Slice your hoods into rings.

In a tray, place the cornflour, salt and pepper.  Mix well.

Lastly, add the calamari rings, and coat well with the flour.

Heat oil until it bubbles, add the calamari one ring at a time, about 6 in a batch.  Fry for about 40 sec - 1 minute, remove and drain on plate covered in paper towel/kitchen paper whilst cooking remaining batches.

Thanks so much for joining in easy peasy dinners - this is so perfect as my husband and eldest daughter actually went fishing last week with a friend and caught lots of squid.... or was it alien perhaps......
