Fast Food at home on a Friday - Portuguese Chicken Burgers




These are sooooo good.  Really. Might be a bit spicy for kids but you could cut down on a few spices I have noted with an asterisk (*) if you were ging to give them to kids.  These are not only a wonderful, easy, tasty meal but the chicken fillets would even be fantastic chopped up in a salad, or just on your BBQ.

Ingredients
600g Chicken thigh fillets

Chicken marinade
1/4 finely diced onion
1 garlic clove
1 1/2 teaspoons paprika
1 teaspoon dried or fresh oregano
3 cardamon pods
1/4 tsp piri piri spice mix* (Or cayenne pepper if you wish)*
1 tb olive oil
1 tb lemon juice

Mayonnaise
1/3 cup mayonaise
2 tb sweet chilli sauce*

5 burger buns or 1 loaf of turkish bread, sliced and toasted.
3 cups shredded lettuce
2 large tomatoes, sliced.

Method:

Mix all marinade ingredient together with a mortar and pestle until becomes paste (about 3 minutes)


Pound your chicken fillets as flat as you can with a mallet or similar

Brush on marinade and refrigerate for about 30 mins to an hour.



Fry in frypan or on griddle/BBQ until cooked but not too brown.


Mix mayonaise simply


Toast and butter your buns or turkish bread, add chicken, mayo, tomato and lettuce and serve.
