Meals in Minutes Monday - hubby's quickie marinated lamb chops



Hubby does love to cook but these days he doesn't get much opportunity to - that will change in the coming years when I return to work.. but if I need a break from the kitchen or my hubby feels inspired he'll knock up a quick meal - this one he made for the frills last weekend when I was in Cairns and it was such a hit he made it for me again last week.

And I agree - delicious and takes no time to make up - you can marinade for 10 minutes or a few hours - the difference will be in the intensity of the flavour - it's up to you - tastes yummy no matter!


Ingredients
10 lamb chops
1/4 cup olive oil
1/4 cup lemon juice
3 cloves garlic
10 mint leaves
pepper


Method:
Blend together with a food processor, blender or stick blender all above ingredients with exception of the pepper.  It will become green and creamy.


In a container with a airtight lid, place all your lamb chops and sprinkle with pepper.  Pour over marinade, cover, give a bit of a shake to distribute the marinade.  Refrigerate until ready to cook.

When ready to cook, heat your frypan, grill or BBQ - until hot.  Place your chops on and cook for a five minutes first side, 4 minutes second side.

Leave to rest for 5 minutes before serving.
