Yum



Soup is ready! Well I've just added my parsley and beans but it looks and smells delish!! How easy is that!?



I also used to make a lentil and chorizo soup which was very popular, and something you can cook for vegetarians without the chorizo.

Ingredients

1 x 420g can of diced tomatoes
1 litre vegetable stock
1 onion, 1 carrot, 2 stalks of celery and 1 parnsip diced
1/2 cup of dried peas
2 cups of dried lentils
2 cloves of garlic bruised and thrown in whole
2 stalks of fresh thyme or 1 tsp of dried
1 bayleaf
Good lashing of salt and pepper
2 smoked chorizo sausages (you can get these at the deli counter usually) sliced in 1/2 cm portions and fried/grilled
handful continental parsley

Method
All all ingredients besides the chorizo slow cooker and leave on low for about 8 hours or high for 6.
2 hours prior to serving add chorizo and parsley.

Lovely with continental loaf or sour bread.

The soup looks fab Liss, and just what I could do with today, since it was still -3 at 9am
