Who's in charge of this weather then?



It's currently 16 degrees and raining!!?? Yesterday it was about 27 degrees and stifling this time of the night! Odd!

I'm about to bring out the slow cooker and the Christmas Ham Bone will be used to make soup overnight. Looking at the forecast tomorrow is going to be another cool day and I think Soup will be splendiferous with crusty bread... I also now have room in the freezer to store leftovers too.

My recipe: Hearty Ham Soup

Ingredients:

  • One ham bone with remaining meat
  • 2 large diced onions
  • 2 tsp. black pepper
  • 500gram soup mix (yellow and green peas)
  • 2 med carrots, sliced
  • 2 parsnips diced
  • 1 bayleaf
  • small handful of continental parsley
  • 1 can of five bean mix, drained.

Place the ham bone and other ingredients besides the five bean mix and parsley in the slow cooker. Just cover with water, and cook on low all day long or high for 4-6 hours.

I cook my peas til they are fairly mushy, but you can cook less if you like them less done. Very simple! If the meat isn't falling off the ham bone, remove and use a fork to remove it and place the meat into the soup. Discard the bone. and then 1 hour prior to serving add the five bean mix and parsley.

Check seasoning and add pepper and salt to taste.
