Make it this weekend: Corned beef fritters with salsa



The weekend was practically made for naughty and lazy breakfasts... and on these cold mornings we're having and using some leftover corned beef these are just the ticket.  I think you really need the salsa to break through the stodginess of the fritters, and redeem yourself, just a little.  It's super easy to make and you can make little ones for the kids to eat with their hands, and dunk in tomato sauce.. if they are so inclined.

Ingredients
2 cups corned beef
1 small onion, finely diced
1 cup plain flour
1 1/2 tsp baking powder
1/2 tsp salt
2 eggs
2/3 cup milk
1 tsp white pepper


Salsa
4 large tomtoes
1 small red onion
2 stalks fresh coriander (cilantro)
2 tb lime juice


Method:
Chop corned beef into 1cm cubes, mix with onion, set aside.

In a bowl mix the flour, baking powder salt and pepper together.  With a mixer or a whisk, beat in the eggs and the milk until a smooth batter.

Stir the corned beef and onion through.

Heat some canola oil in a frypan about 1cm deep.    Heat until it sizzles (test by flicking in a little batter or water) and then turn down to a mid-high setting.  Spoon in mixture into batter formations (you may like to use egg rings if you want to make them 'pretty'.

Fry for about 90 seconds each side. Leave to drain on some paper towel.

To make your salsa finely dice your red onion and tomatoes and chop the coriander finely.  Mix into a bowl and squeeze lime juice over the top.


Serve with your fritters.. yum!

This post takes me straight back to my Gran's kitchen. We lived with her when I was 8 and these would be on the menu every week - with pineapple fritters for dessert!

@Ms Styling YouOh I know! But my Nan used to serve them with bubble and squeak - the full leftover treatment! I couldn't imagine sitting down to all that now, the salsa lifts it beautifully.

this recipe couldn't have come at a better time. Darwin is currently experiencing record low temperatures - it's only 22 degrees and it's 12.30 pm! UNHEARD OF! So the southerners aren't the only ones freezing :D

So last night I made what my mum calls a 'boiled dinner' - corned beef with white sauce and veges. And today I made the fritters, putting all the leftover white sauce and veges into the fritters. Such a hit - even my little sproglette, who is not a fan of meat, is chowing them down. And my husband passes on his thanks.

Such a great way to take advantange of this not so warm (not sure Darwin will ever be 'cold') weather. Thanks!
