Fast food on a friday: Throw together Pizza risotto


I know.  It sounds a bit weird, and don't worry - there's not REAL pizza in there - just the pizza flavours.  This is a twist on an old favourite the oven baked risotto - and I think in this cold weather people with busy lives want to throw a few things in a pot/dish and move on to other things... like pinterest or heaven forbid, the washing.

I serve this with some green beans on the side but if you're up for a different type of pizza tonight you may just want it on its own.


Ingredients:
2 cups arborio rice
100 grams smoked sliced ham, cut into ribbons
2/3 cup grated mozzarella
2/3 cup grated tasty cheese
400gr tin diced tomatoes
1/2 cup red wine
1 clove garlic, grated
10 leaves of basil, finely chopped or 1/2 tsp dried
1 stalk fresh oregano, finely chopped or 1/2 tsp dried
1 stalk parsley, finely chopped or 1 tsp dried
1 cup diced/sliced mushrooms
2 tb tomato paste
1 litre vegetable stock


Method:
Preheat oven to 200 degrees c

In an oven proof dish add all the ingredients except reserve 500ml of the stock.


Cover with foil and bake for 30 minutes.  Take the foil off and add the other 500ml of stock.

Bake for another 30 minutes.  Cool for 15 minutes unless you like to burn the roof of your mouth (not recommended from experience!!!)

So there you are - easy-peasy-and-not-japanese-y! You may like to add olives or salami - or even raw prawns - go for it!!  You will not make this just once - promise!!

Hi, I made this for dinner tonight with a few additions, added more mushrooms and ham then what was listed, also green capsicum & chorizo.
It was definitely a hit with my 2 kids and a non rice eating husband!

Made this tonight for a non risotto loving family. We all enjoyed it and as a bonus very easy to prepare. Will experiment next time with a few different ingredients.
