Sweet lemon pancrepes



As much as I love filled crepes, pancakes , Bills ricotta hotcakes and of course my rip-off-of-maccas-hotcakes sometimes I just like to make something in between.  Sometimes it's for a Sunday breakfast, sometimes for a dessert, sometimes for a cold afternooon's snack.    Simple, and feeds our family of five with some to spare, if you have a smaller family, halve the recipe, if you have 5 or more, perfect!


Ingredients:
685ml milk (2 3/4 cups)
190ml cream (3/4 cup)
4 large eggs
50g butter, melted
1/2 cup caster sugar
2 cups plain flour
zest and juice from 2 lemons


Method:
In a bowl, whisk together the milk, cream, eggs and butter.  Whilst mixing gradually add in the sugar....

and then sift in the flour bit by bit to finish your batter.  Lastly, add the zest and juice.

The batter should just coat your finger...

Heat up a non stick frypan with some butter and then tip in 3/4 cup of batter into the pan.

Wait til the bubbles form on top and most of them pop, and then turn over...

Only a minute at most on the other side, then serve! I like a little smear or extra butter and that's it but it would be equally as good with berry jam or sweeted cream cheese!

I honestly make lemon sugar crepes at least once a week for lunch with my three year old, her favourite food (and i quite like it too!)

Hehe love these pancrepes! And lemon is my favourite flavour bar none. Well except for Mont Blanc :P
