Fast food on a friday: Quick baked coconut curried chicken



Who doesn't love a simple and yummy recipe - and this is up there with the simplest and tastiest.  Minimal effort with maximum results, just what's called for at the end of a busy week.  Knock these up and serve with some steamed rice and veges - so amazing.


Ingredients:
6 chicken thighs (but you could use up to 10 without altering the rest of the recipe)
1/4 cup low fat coconut cream
zest of 2 limes
juice of 1 lime
1 small red chili, finely diced (you can hardly taste, promise, but omit if you really want/need to)
2 tsp curry powder
1 1/2 cups shredded coconut


Method:
Preheat oven to 200 degrees c
Mix coconut cream, lime zest and juice, chili and curry powder

Throw in the chicken and coat well.  Then dip and cover with coconut and place on greased tray

Bake for 20-25 minutes until golden brown,  then serve!

I love this recipe! Love it! Twill be dinner tonight and lunch tomorrow :) We customise ours a bit by adding more chilli and putting more coconut on mine and less on my husband 's. Delish!
