Lunchbox Legends: Oat and cranberry muffins


I love just throwing some things together and fluking something wonderful.  These muffins have the visual appeal kids like (let's face it, anything red is attractive to kids) and the oats and cranberries are a conscious health decision.  I remember drinking cranberry juice and eating them in my nut-mix when pregnant with all my girls as they are supposed to help prevent UTI's. Yes. Really. Also, drinking cranberry juice I could also pretend it was a cosmopolitan... that's another story....

This made 15 muffins, so for us - 5 days of lunchbox treats - in 35 minutes - WINNER!


Ingredients
2 cups self raising flour
1 cup rolled oats
1/2 cup brown sugar
2/3 cup cranberries
1/4 cup canola oil
2 eggs
1 2/3 cups buttermilk or yoghurt



Method:
Preheat oven to 190 degrees c

Mix all dry ingredients in a bowl and give it a good mix.


Add wet ingredients, it should be a gluggy-type batter.

Spoon into muffin or cupcake papers (I love these ones from Paper Eskimo - I'm telling you because you always ask!) about 2/3 - 3/4 full.

Bake for 20 minutes or so.  Should be golden brown on top.


Delicious and practically guilt free!

Just made these- converted to be gluten free- and they were GREAT. Thanks for the recipe!
