Sunday baking project: Sweet and moist lemon vanilla yoghurt muffins



If you cook with kids as much as I do, you will learn that particularly for those sub-seven, is that taste-testing is the most important part of cooking for the little ones.  I used to fight it, but unless it is dangerous or poisonous, I pretty much let them go because it's all part of loving food and cooking.

When we made these I decided to document just how MUCH my two smallest frills taste-test.  A LOT in this case.  If your little (or big) ones are headed back to school this week this will serve as a bit of inspiration and even if you don't they are fabulous for afternoon tea and a fun activity for you and the kids.


Ingredients:
2 eggs
2 tb honey
1/4 cup caster sugar
1 tb lemon zest
300ml vanilla yoghurt (I used 2 x 150ml tubs vanilla vaalia - it's nice and thick)
75g butter, melted and cooled
1/4 cup milk
2 cups self raising flour
1/3 cup lemon juice
1/3 cup caster sugar, extra


Method:
Preheat oven to 180 degrees c

In a small jug or bowl mix together egg, honey, sugar, lemon zest, yoghurt, and melted butter and milk.

Make sure Mummy emptied the yoghurt tubs properly.

And the last scraps of the honey are gone too..

Pour this into a bowl with the self raising flour, mix through well

Taste each of the mixes to check if they taste alright... (twin-teaming here)

Then swap over so everyone gets a turn at stirring tasting:

Spoon into muffin/cupcake papers about 1/2 way.

Make sure there's absolutely no mixture let in the bowl.

Bake muffins for 15-20 minutes.   Whilst they cook mix the lemon juice and remaining sugar together and put in the microwave for 30 seconds on high.  As soon as the muffins are out, prick them 3-4 times with a skewer and then spoon over the sugar/lemon mix.

Leave to completely cool... then eat!   You can store these in airtight container in the fridge for 5 days or in the freezer for 2 months.

They are light and fluffy, a little sweet and a little sticky (if you don't like sticky don't do the glaze at the end) they will be a favourite in no time!

Have saved this most delish looking recipe for next week's baking effort. This week my two littlies and I have baked chocolate chip orange cupcakes. They are now up cooling on their racks awaiting decoration, which is the baking phase 2 activity for this afternoon! Enjoy your muffins with your frillies. So cute that they love to help :)

@Yvette Yay Yvette! Use any yoghurt you like - add some extra berries - you can totally make the recipe your very own :)

To make you feel better about the, ah, CONSUMPTION that accompanies baking, when a recipe says 'makes 12' in our house, I'm lucky to get 10! x

Thanks for the recipe Liss. My 8 year old nephew and I gave them a go. And the results were amazing! He had a great time and the muffins are DELICIOUS!
