If your kids are anything like mine they have no idea what a sleep in is. I doesn't matter how long I try to keep them up at night, they still wake up at 6:00am or sometimes earlier with block-out curtains, rooms at a comfortable temperature - you name it. We have tried everything except medicating them - though sometimes have been tempted.. .(joking!)
The only upside to this early waking on the weekend is that we do get an early start on things or just laze around for a few hours which feels quite decadent - even though it's only until 8.30am or so. If I am feeling motivated to cook I can do that too and get some baking out of the way for the week or make a yummy breakfast.
I love having a bit of fun with breakfast because it can set the tone of your day and wouldn't you love to receive a loveheart sausage first thing in the morning? I know I would. By having an open sausage you get that lovely crispy-crunchiness too which I adore.
Ingredients
Sausages (makes 8 patties - I like to have a few extras for sandwiches/snacks)
500gr sausage mince (or your favourite sausages, raw and skinned)
1 small onion, finely diced
1 tb finely chopped parsley
1 tb white pepper
Best scrambled eggs (enough for 4 adults or 2 adults/3 kids)
6 eggs
100ml cream
1 tsp white pepper
1 tsp salt flakes
20g butter
Method:
Preheat oven to 150 degrees c
Mix the onion, parsley and pepper into your sausage mince and then flatten out onto a sheet of baking paper.
Cut out your heart with a cookie cutter (or whatever shape you have/like)
with a splash of oil, fry your sausage heart patties about 4 minutes on first side, 2 on the other then transfer to a baking tray and pop into the oven whilst you cook the rest of the batches of sausage and then your eggs.
In a bowl mix eggs, cream salt and pepper and whisk together until a consistent colour with a fork.
Melt butter into the bottom of the frypan (wash frypan if using the same ones you used for the sausage) and spread around evenly. Add the eggs and leave for 40 seconds on medium heat, and scrape through the middle with a spatulata/spoon every 30 seconds or so, just folding the eggs over until cooked.
After about 3 minutes they should be totally cooked and still moist. Take off the heat.
Take your sausage out of the oven, a lot of the fat should have drained off, so pat them with some paper towel to get off any excess.
Serve on your plate with some sauce, toast, egg and whatever else you fancy!

My girls will eat anything heart shaped! Was round at a friend this week and she made delicious homemade sausage rolls using sausage mince and I can't believe I have never done it.... must get sausage mince on my shopping list. PS I adore hash browns... one of my favourite breakfast foods! With a poached egg and hollandaise, heaven!
