Something different for your pink ribbon celebration

Who doesn't love to go to a pink ribbon function?  All that pinkness, for a great cause and usually some yummy sweet treats.    Last year I went to town and made loads of stuff, but I found the savouries I put out where quite popular and could have used more than the 2 dozen pink salmon mini quiches amongst the four dozen cupcakes and 4 dozen iced cookies.

So this year I'm making this too, because it's yummy and most importantly it takes two minutes!  If that!  I've made this a few times in recent times and use light sour cream and keep a little aside for me to have a snack.  Scrum-diddlie-umptious.

Beetroot dip
1 small tin beetroot, drained
1 glove garlic, peeled, roughly chopped
1 spring onion, roughly chopped
250g sour cream

Method:
Put all ingredients except the sour cream in a food processor and process until smooth.  Add sour cream, process until desired consistency!

Serve with crackers, celery or carrot sticks or sweet onion turkish bread (a bit pink too!)

So tell me, do you attend or hold pink ribbon functions?

Sunday baking project: Coloured cut-out cookies

I have a wee addiction to cookie cutters.  Put your hand up if you're with me!?? Please?

Cute ones I just have no control over myself and I have a super-big-bag of them. A-hem.   I've really had to stop myself from going crazy over at mini gourmets but when I saw the little teapot... well.. it spoke to me 'buy me, buy me, I'm only $1.99'.

And at $1.99 how could I refuse that cute little teapot I ask you?  How?

Usually I use this recipe but I wanted something new.  We went to a birthday party yesterday and am off to another today so I thought I'd make the little birthday girls some personalised cookies.. and of course try out my new teapot cookie cutter that arrived on Friday!

So cute no?  It's iced with white chocolate and decorated with cachous but they look cute not decorated too!

Here's the recipe!

Ingredients
185gr butter, at room temperature
1 cup white sugar
1/2 tsp wilton gel colouring (or colouring of your choice)
1 egg
1 tsp vanilla extract
2 1/2 cups plain flour

Method:
Cream your butter and sugar together - mix with your mixer for at least 2 minutes - until it becomes light and fluffy.  Add the vanilla extract and food colouring and mix well.

Add egg, and then gradually 1/2 a cup at a time add the sifted plain flour until it is all combined. It should pull away from bowl and become dough-like.

Place in a ziplock bag, and into the fridge for a minimum of 2 hours.

When you remove, preheat the oven to 170 degrees c.

Let your dough thaw for about 5 minutes, and roll out on a liberally floured surface, cut out as you please!

Place on greased tins and bake for 9-12 minutes.  Keep an eye on them, because you don't want them to brown around the edges (as a few of my first ones did!) it ruins the colour.

Make a whole rainbow of cookies, make them to match your party, make them for pink ribbon day!  They are easy and look fabulous on a plate, irresistible!

Feel like making some today?  Tell me about your favourite cookie cutter if you have one..!

Tenth Photo

I haven't done a meme for a long while - most of them are recycled, but when I was tagged by Jade for this one, I thought it would be a bit of fun.

The basics of “Photo #10″ are to:
  1. Open the first/oldest photo folder in your computer library
  2. Scroll to the 10th photo
  3. Post the photo and the story behind it
  4. Tag 5 or more people to continue the thread.

It's little surprise that mine is food. This folder in October last year is the earlier folder given that I move folders regularly off my PC and onto our external hard-drive.  This pic is of the gorgeous Pink Ribbon biscuits hubby and I made (yes, he is culinary competent!) for a pink ribbon morning tea - I love this pic too - it's my desktop image. (feel free to save it as your own, it makes your computer look good enough to eat!)

We made many things - pink salmon mini quiches, Monte Carlos (well Kir and I made those)  perfect pink ribbon cupcakes, lemon meringue cupcakes, triple chocolate cupcakes,  pink popcorn.  We took them along to a friends' grand house (sprawling mansion I kid you not) and enjoyed a lovely morning with friends and lots of yummy food.  We raised loads of money for the pink ribbon cause too, because that's what it's all about right?

If you want to see some more pics from the day they are here.  Looking forward to pink ribbon this year too, I've added a whole lot more pink recipes since October to add to my pink ribbon repetoire!  I will, I promise show you how to make these gorgeous biscuits this year too!

As for tagging people, I would love to tag you all!  Please post back a link here - I can't wait to see what you've got in your photo files!

Raspberry Rice Rectangles - no baking!

Hello!

You're going to love these ones if you have kids, or even if you don't!  These are a great addition to a lunchbox or to take to a BBQ or have a birthday party.  I know these will have an encore performance at Pink Ribbon Day for sure!

They take about 15 minutes to prepare so really, no baking required!

Ingredients:
280g raspberry and vanilla marshmallows
75g butter or margarine
4 1/2 cups rice bubbles
1 cup rolled oats
1/2 cup dessicated or shredded coconut
1 cup dried raspberries (you can get these from fruit markets/deli or healthfood shops)

Method:
In a saucepan, melt the butter and marshmallows together over medium heat.  Stir and take off the heat once melted.

In a large mixing bowl combine the rest of the ingredients

Prepare a baking dish with aluminium foil, ensuring all sides are covered with some overhang to fold over the top.

Stir in the marshmallow and butter mix and stir quickly to combine.

Press the mixture into the baking dish, make sure it's compacted by pushing down into the corners with wet hands.

Cover the top and transfer to the refrigerator for 2 hours.

Take out of fridge and lift out the aluminium foil, peel off and cut into rectangles (or any shape you like!)

Store in airtight container away from direct light for 3-4 days

Home made Doughnuts - Iced, Glazed and Cinnamon..

I've been looking for a doughnut recipe forever.  A tried and tested one, one that would taste authentic and wouldn't use tons of equipment.

This is a recipe I would make again, but I would change a few things:

  • Make the dough the night before - as I did it in the AM and had to wait all day to finish them, bit annoying!
  • It makes A LOT of doughnuts.  Perfect for a birthday party or pink ribbon gathering, but if it's for your family, cut the recipe in half, or  freeze half the doughnuts (the cinnamon ones anyways)
Dough Ingredients
280ml Whole Milk, Warm
¼ cups Caster Sugar
2-¼ teaspoons  Dry Yeast
2 whole Large Eggs, Beaten
150gr Unsalted Butter, melted
4 cups plain flour
¼ teaspoons Salt

Canola or vegetable Oil

Method:
Heat milk until warm but not hot.  Add caster sugar and stir until dissolved.    Add yeast and stir until wet, set aside for 10 minutes until it becomes frothy.

Heat butter until almost melted, set aside

Beat eggs in another container set aside.

In your mixer bowl, pour eggs and butter in, whisk until well combined, add the milk/yeast.

then cup by cup and with the dough-hook running at a low to medium speed, add the flour until all combined, knead for 5 minutes, then scrape down sides and bottom to ensure all flour/ingredients get mixed.  Continue mixing for another 5 minutes, remove from stand and leave to sit for 10 minutes.

Transfer to a greased bowl and cover with clingfilm and sit in fridge for a minimum of 8 hours or overnight.

Take dough out of the fridge (yes it rises in the fridge, weird!) and roll out onto a floured surface to about 2cm thickness

Depending how big you want your doughnuts, cut out your circles, and then your holes.  I cut mine out with an ikea tumbler and a champagne keeper!  I really should invest in some ring cutters!

Mine had big holes, but I like 'em like that - you might like smaller holes.   Keep the holes too - they are lovely on their own.  I used some leftovers to make little plaits too.

Place the cutouts on floured baking trays and leave to prove for about an hour - they should puff up by about 25-40%.

If you like cinnamon doughnuts, prepare your sugar now.  3/4 cup of white sugar and 2 tb of cinnamon powder, spread out on baking tray.  Also prepare by layering 3 sheets of paper towel on a plate ready for frying your doughnuts.

When proved, heat your oil.  I used canola but you could use vegetable also.  Ensure it heats to a boil and then turn down to medium heat.  With a slotted spoon, ease the donuts in, you should only need to fry for about 30 seconds on each side, until medium brown.  I did my doughnuts one at a time, but do what you're comfortable with - with the doughnut holes, I did these five at time.

Ensure you drain each doughnut throughly before transferring to paper towel.  If you are doing cinnamon donuts, transfer to the cinnamon sugar and coat, sit aside to cool.

If you do doughnut holes, I recommend this method - they are delicious and my hubby loved them.

To glaze - this is JUST like Krispy Kremes.  Serious.
Mix 2 tb milk with 1/2 tsp vanilla extract and 1 cup of icing sugar, over low heat, dissolve sugar and bring to a low boil.  Remove from heat, brush on doughnuts on wire rack with baking paper underneath to catch the drips, turn over and repeat when done all tops - covers about 15 doughnuts.

To ice (strawberry doughnuts)- now my frills love strawberry dougnuts so these were not an option to miss.  Mix into 1 cup of sifted icing mixture 2 drops strawberry essence, 2 drops pink/rose food colouring and 1 tb water.  Mix through with fork until a constant consistency.  Spread onto doughnut and add sprinkles if you wish!

This recipe was sourced from Pioneer Woman, I love her!

Yes, I'm giving you the finger...

Well a few of them actually!  Finger buns!

To be honest, I'm not a die-hard fan of the finger bun.  I remember them being in the school tuck-shop, but I don't remember buying one.  I know I've had them before though, don't know where !  However, my three little frills whenever we pass bakers delight squeal and plead for their 'fun buns' which are round finger buns sold for $1 each.

Always one to try and make something myself I thought I'd give it a try.  WELL let me say this: these are actually fun to make!  I've made a batch of 13 mini-ones - (I'd say it would make 8-9 full sized ones) with this mix, which should last me the week - given that hubby will take one each day to work, And the girls will have two each this week for morning teas.

In this humidity too, they rise beautifully and are fluffy and light on the inside, and sparing the icing - are quite good for the waistlines too.

Ingredients
475g plain flour
35g milk powder
75g caster sugar
2 1/2 tsp instant dry yeast
1 egg, lightly beaten
150ml lukewarm water
40g butter, cubed
1/2 cup currants (optional)

Method:
In a bowl, add the flour, milk powder, sugar and yeast (and currants too if you want them!)

Start mixing in the water and the egg, the dough will be sticky - but knead for about 4 minutes
Add the butter in cube by cube and continue to knead for another 6 minutes it well combined and quite elastic.

Place into a greased bowl and cover with clingfilm and allow to prove for about an hour or until it has doubled in size.

Punch down and hand-knead the dough a second size and then roll into sausage-like shapes.  Place onto greased  baking tray, cover with clingfilm and allow to prove for another hour or until doubled in size.

Preheat oven to 190 degrees c

Bake for about 10-15 minutes until golden brown on top.

Whilst they are cooling, make some icing with 2 tb of soft margarine or butter and 1 cup icing sugar mixture and a few drops of pink food colouring (or other colouring/no colouring if you wish!)  -whip together until it is a spreading consistency.

When completely cooled, ice your buns and sprinkle (or not!) with coconut or hundreds and thousands, sprinkles or cachous if you're feeling like something special!

Pretty in pink

It was a lovely day today at the pink ribbon breakfast I co-hosted.  Venue, company and lots of yummy treats.  Pink champagne at 10am!  I am pretty tired now - hubby and I were up until the wee hours making 5 dozen cupcakes and 7 dozen variety of biscuits... up this morning early to make fresh mini-quiches and pink popcorn...

Doesn't it look gorgeous though?  All for a good cause!
