Although this made quite a large slice, the smell of them straight out the oven - and then brushed with the honey glaze is enough to have you rethinking whether they should go in the lunchbox at all. I couldn't resist but 'sample' the merchandise whilst it was still warm. Delish.
Of course, if you want to make half the amount - go ahead! It will make 36 pieces of slice or 18 pieces of slice and 1 cake to serve 10. I have some for slice and some for a dense cake. I can freeze in portions or whole.
Ingredients:
1 cup pitted dried dates, roughly chopped
4 medium bananas
2 1/2 cups plain flour
2 tsp baking powder
1/2 cup vegetable oil
3/4 cup caster sugar
1/4 cup milk
3 tb honey
Method:
Preheat oven to 180 degrees c
Place 1/2 cup water with your dates in a small saucepan, bring to the boil and then simmer for a few minutes. Put your bananas in and combine well. Allow to cool.
Grease a rectangle baking or casserole tray and line with greaseproof paper.
In a mixing bowl add flour, baking powder, sugar and oil. Add the date/banana mix and mix well, add milk until it becomes a stiff batter.
Pour into your baking tray and smooth top into the corners.
Bake for 45-55 minutes until golden brown on top and cooked through.
When you remove from oven, pour over honey and brush over slice evenly. Allow to cool for 15-20 minutes before removing from tray and slicing up!
Keep in airtight container for up to 6 days or freeze for up to 3 months in airtight container or ziplock bag.

I have a few ripe and ready bananas in the freezer and was JUST wondering what to do with them. Have to give this a try - but what if I dont have dates? Is there a good substitute or can it go without?

I personally wouldn't go without the dates - it gives the slice depth and also a pudding-y yumminess. You won't regret the trip to the shops - honest. In fact I just took out another one out of my oven just now - my eldest daughter wants it in her lunchbox tomorrow!
